Anglesey Cake

280g (10oz) Flour (sifted)
235ml (8 floz) Milk
110g (4oz) Lard
110g (4oz) Dried Fruit
85g (3oz) Sugar
1 Egg
1 tsp Treacle
½ tsp Bicarbonate of Soda
Pinch Mixed Spice
Pinch Ginger
Pinch Salt
Preheat oven to 190°C: 375°F: Gas 5.
Cream the sugar and lard together.
Dissolve the bicarbonate of soda in the milk and beat in the egg, add this and the remainder of the ingredients, thoroughly combining.
Bake in a greased tin for about 45 minutes
