Southend Cockle Cakes
170g (6oz) Plain Flour
110g (4oz) Castor Sugar
110g (4oz) Butter
Few Drops Vanilla, Lemon or Almond Essence
Icing Sugar
Pre-heat oven to 180°C: 350°F: Gas 4.
Cream together the butter and sugar, until light and fluffy.
Gently fold in the sifted flour.
Add the essence.
Spoon into well-greased scallop shells.
Bake for 20-25 minutes.
Allow to cool on a rack.
Dust with icing sugar before serving.
