Irish Porter Cake

450g (1lb) Flour
450g (1lb) Sultanas
300ml (½ pint) Porter or Stout
225g (8oz) Shortening
225g (8oz) Sugar
50g (2oz) Chopped Peel
2 Eggs
1 tsp Baking Powder
½ tsp Nutmeg
½ tsp Mixed Spice

Preheat oven to 180°C: 350°F: Gas 4
Sieve together the flour, baking powder and salt.
Add the sugar, nutmeg and spice.
Cream the butter and sugar until light, carefully fold in the porter
Combine with the flour mixture.
Fold in the fruit and blend thoroughly without over-beating
Place in a well-greased large cake tin.
Bake for 2 ½ hours or until well risen and springy to the touch or test with a skewer, when it comes out clean, it is ready.
