Melting Moments

150g (5oz) Self Raising Flour
85g (3oz) Caster Sugar
65g (2.5oz) Margarine
40g (1.5oz) Lard
½ Egg, size 3
1tsp Vanilla Essence
Oats or Desiccated Coconut
Glace Cherries

Pre-heat oven to 180°C: 350°F: Gas 4
Grease two baking trays
Cream the margarine, lard and the sugar until light and fluffy.
Beat in the egg and vanilla essence.
Stir in the sifted flour, mixing well.
Roll into walnut sized balls and toss in rolled oats or desiccated coconut
Place onto baking trays, flattening slightly, placing half a cherry on top of each biscuit.
Bake for 10 to 15 minutes.
Turn out on to a wire rack to cool.
Makes approximately 30
