Rice Buns
150g (5oz) Self Raising Flour
110g (4oz) Margarine
110g (4oz) Caster Sugar
85g (3oz) Ground Rice
75ml (2½fl oz) Milk
2 Eggs, size 3
Lemon Essence, few drops
10 Glace Cherries
Pre-heat oven to 200°C; 400°F: Gas 6
Place 20 paper baking cases into trays.
Cream margarine and sugar together until light and fluffy.
Add the beaten eggs, milk and lemon essence.
Mix together flour and ground rice.
Gradually add the creamed mixture with the flour and rice, mixing well.
Half fill the paper cases with the mixture, placing half a cherry on top of each.
Bake for 15 to 20 minutes or until firm.
Turn out on to a wire rack to cool.
