Singing Hinny
350g (12oz) Self-raising Flour
150ml (¼ pint) Single Cream
75g (3oz) Currants
50g (2oz) Ground Rice
50g (2oz) Sugar
50g (2oz) Lard
2 tsp Baking Powder
1 tsp Salt
Mix together the flour, rice flour, sugar, baking powder and salt.
Rub the lard lightly into flour, lifting the mixture to add air, until the mixture resembles
breadcrumbs, then mix in the currants.
Make a well in the middle of the mixture and stir in cream, mix into a soft dough.
Roll out until 5mm (¼ inch) thick, prick all over with a fork.
Cut into rounds.
Heat a lightly oiled hotplate, griddle or heavy bottomed frying pan, gently place a few of rounds
over a medium heat and cook for 3 - 4 minutes on each side until well browned.
