Reading Sweet Cake
225g (8oz) Flour
170g (6oz) Butter
110g (4oz) Caster Sugar
3 Eggs
2 Egg Yolks, beaten together
3 tbsp Brandy
3 tbsp Sherry
Icing Sugar
Pre-heat oven to 180°C: 350°F: Gas 4.
Butter and line an 20cm (8 inch round) cake tin.
Cream the softened butter and caster sugar together until light and fluffy
Beat the eggs and yolks together.
Add to the mixture.
Slowly add the sifted flour a little at a time, mixing thoroughly.
Stir in the brandy and sherry.
Pour the mixture into the cake tin.
Bake for 1 hour.
Allow to cool in the tin for a few minutes before turning out on to a wire rack.
Dust with a little sifted icing sugar before serving.
