Glamorgan Sausages
Selsig Morgannwg
Serves 6
160g (6oz) Fresh White Breadcrumbs
110g (4oz) Cheese
Small Onion
2 Eggs
Flour
Dried Breadcrumbs
½ tsp Mustard
Salt & Black Pepper
Oil for frying
Grate the cheese and onion.
Mix the fresh breadcrumbs, cheese, onion, mustard and seasoning.
Beat together 1 egg and 1 egg yolk and add enough to bind mixture.
Divide into twelve and roll into sausage shapes.
Dip into egg white (and any left over egg mixture) then into well seasoned flour, then dip into egg again and coat with dried breadcrumbs.
Fry in hot oil until golden brown.
