Stilton Pears

Serves 4

2 Large Dessert Pears,
75g (3oz) Stilton Cheese
50g (2oz) Curd Cheese
2 tbsp Lemon Juice
2 tbsp Sunflower Oil
1 tbsp Mayonnaise
1 tsp Poppy Seeds
Pinch Mustard Powder
Pinch Sugar

The pears should be ripe but firm, washe and core them, then sprinkle with lemon juice to prevent discolouration.
Blend the cheeses together.
Press as much of the mixture into the cavities of the pears as possible.
Chill for at least 45-60 minutes.
Whisk together the oil, mayonnaise, remaining lemon juice, poppy seeds, mustard and sugar.
Spoon onto 4 plates.
Cut each pear in half lengthways, then slice, arrange fanned out on the dressing.
Serve immediately.
