Bishop's Nightcap
300ml (½ pint) Water
110g (4oz) Sugar
1 Bottle Port
1 Large Orange
12 Cloves
½ tsp Ground Mace
½ tsp Ground Ginger
½ tsp Ground Cinnamon
½ tsp Allspice
½ tsp Ground Cloves
1 Lemon, rind thinly peeled, juice strained
Stick cloves into orange.
Place in an ovenproof bowl, cover closely and roast until a rich brown colour.
Cut up into 8 pieces, removing pips.
Place the spices and lemon peel into saucepan containing the water and bring to boil.
Simmer gently 30 minutes.
Strain the liquid through a fine sieve and stir in the lemon juice and sugar.
Add roasted orange and port, reheat but do not allow to boil.
Serve immediately
