Dr Johnson’s Punch

Makes: approx 25 glasses

3 Bottles of Claret or Red Wine
1.8lt (3 pints) Boiling Water
175ml (6 floz) Brandy
175ml (6 floz) Orange Liqueur
1 Orange
6 tbsp Sugar
6 Cloves
6 Whole Allspice
Root Ginger

Prick the orange in about twenty places with a skewer.
Place the orange, sugar, cloves, allspice and a bruised piece of ginger about 2.5cm (1 inch) into a large saucepan.
Pour over the water and simmer for 20 minutes.
Add the wine and simmer for a further 15 - 20 minutes, do not allow to boil.
Remove from the heat and add the brandy and liqueur.
Place into a punch bowl, removing the spice if wished, the orange will float in the liquid.
Serve immediately.
