Pope's Posset

½ Bottle White Wine
300ml (½ pint) Cold Water
110g (4oz) Sweet Almonds
85g (3oz) Bitter Almonds
Sugar

Blanch and pound almonds, adding 1-2 drops water to prevent them from becoming oily.
Put into a saucepan together with the water and raise gently to the boil.
Strain the liquid into a clean saucepan
Stir in the white wine, add sugar to sweeten the taste.
Return to boiling-point.
Serve immediately
