Mom's Apple PieIn my case I am lucky that there are several dishes that no matter how well made by others simply cannot compare to my enjoyment of those cooked by my mother Laura.

The first is her apple pie, when I was younger I can remember her pastry making and to be kind it was more like cardboard than what it was intended to be.

As the phrase runs "practice makes perfect" and in this case it is true, she has developed such a light touch that it now literally melts in the mouth.
Mom's Apple PieShe always stews the apples lightly with a little sugar and allows the mixture to cool before making the pie. Before baking it she dusts it with sugar.
There are no special secret ingredients or methods but no matter how many times I have eaten other apple pies nothing can compare to my mom's served with lashing of custard.

Another dish that is now known in the family as "Granny Mix". Which contains swedes, turnips, carrots and parsnips.
These are boiled until tender and well drained then mashed and lightly seasoned.
This makes a great accompaniment to a Sunday roast in the winter.
Better still are the leftovers, which when mixed with any leftover potatoes (mashed) can be fried on the following day and served with bacon, sausages or whatever takes your fancy.
