Angels on Horseback

Serves 6

24 Oysters
12 bacon Streaky rashers
12 small slices Toast
Butter
Watercress

Pre-heat oven to 200°C: 400°F: Gas 6
Stretch the rinded bacon with the back of a knife, then cut each rasher in half.
Wrap a piece of bacon round each oyster.
Place on a baking tray.
Keep them packed up tight so that they don't come apart (alternatively pierce with a cocktail stick to prevent this).
Bake for about 8 minutes.
Butter the toast, arrange 2 angels on each piece (remembering to remove cocktail sticks - if used) and garnish the dish with the watercress.
