Kipper Paste
2 medium Kippers
150g (5 oz), unsalted Butter
2 tsp Lemon Juice
Melted Butter
Cayenne Pepper
Black Pepper
Place the kippers in boiling water for 10-12 minutes.
Drain well, remove the skin and bones and flake the flesh.
Place cubes of butter into a saucepan over a low heat until half melted.
Add the flaked kipper, combing well with a fork until the mixture is very smooth.
Add the lemon juice and season to taste.
Place in small ramekins, pressing down well.
Spoon over the melted butter to form a seal and allow to cool and set.
Serve chilled.
