Menai Pride Mussel Pate

Pate Cregyn Gleision Mucai

Serves 4

75g (3oz) Mussels
4 Egg Yolks
50g (2oz) Herring roe
25g (1oz) Celery
25g (1oz) Carrot
25g (1oz) Breadcrumbs
Mixed Fresh Herbs
1 Clove Garlic
Brandy & Double Cream to taste
Salt & Black Pepper

Pre-heat the oven to 180°C; 350°F: Gas 4
Finely mince the cooked and shelled mussels, vegetables and herring roe.
Add herbs, seasoning and breadcrumbs.
Mix well with egg yolks, brandy and cream.
Cook for 30 minutes in a bain marie in the oven.
Serve warm or cold.
