Pear Cordial

A recipe from the 15th-16th Century.

3 Pears (or 6 dried pears)
450g (1lb) Sugar, dissolved in 120ml (4 floz) water
600ml (1 pint) Vodka
1 Orange
3 Whole cloves
1 Whole peppercorn
½ tsp Whole coriander
½ tsp Ground cinnamon

Remove seeds and dice pears.
Carefully remove the peel from the orange avoiding the white pith.
Place the pear, spices and the orange peel in a glass jar.
Add vodka, cover, and leave for 2 weeks.
Strain through a muslin cloth and add sugar solution.
Leave until clear.
