Spiced Cordial
A recipe from the 15th-16th Century.
600ml (1 pint) Vodka
225g (8oz) Sugar
120ml (4 floz) Water
50g (2oz) Honey
7 Cardamom pods, crushed
3 Whole allspice
2 Sticks of cinnamon
1 Whole nutmeg, broken
½ tsp Whole cloves
Peel of ½ Lemon
Peel of ½ Orange
½ Vanilla pod, broken
¼ tsp Caraway seeds
Simmer all of the ingredients except the vodka for 15 minutes.
Allow to cool.
Pour into glass container with the vodka.
Allow to stand for at least three weeks.
Strain through muslin cloth and allow to clear.
