Little Pigs in Blankets
Large Oysters
Bacon, thinly sliced
Slices of Toast
Parsley
Salt and Pepper
Season large oysters with salt and pepper.
Trim the fat from the bacon, wrap an oyster in each slice and fasten with a little wooden skewer (use toothpicks or cocktails sticks).
Heat a frying pan and add the "little pigs".
The pan must be very hot before the "pigs" are put in and then care must be taken that they do not burn.
Cook for just long enough to crisp the bacon, about two minutes.
Place on slices of toast that have been cut into small pieces and serve immediately.
Do not remove the skewers.
Garnish with parsley.
