Devilled Lobster

450g (1lb) Lobster Meat
235ml (8floz) Milk
50g (2oz) Cream Cracker Crumbs
2 tbsp Butter
2 tbsp Flour
1 tbsp Lemon Juice
1 tbsp Parsley, chopped
1 tbsp Onion, chopped
1 tsp Salt
Pinch Cayenne Pepper
Paprika, to taste
Pepper, to taste

Sauté the onion lightly in the butter.
Add the flour, salt, cayenne, paprika, pepper, lemon juice and parsley.
Mix well and add the milk.
Cooked until it thickened.
Add the lobster.
Pour the mixture into the clean shell of the lobster, sprinkle with cracker crumbs and place in the oven long enough to brown the crumbs.
Remove from the oven, place on a serving dish, garnish with the claws and tail of the lobster, if desired and serve at once.
