Curd Cheese Cakes
Curd Cheese
225g (8oz) Currants
170g (6oz) Clarified Butter
110g (4oz) Sugar
4 Eggs
Cream
1 tbsp Rose Water or Brandy
Lemon Peel, grated
Nutmeg
Salt (Optional)
Mix the curd cheese with a little cream to loosen.
Beat four eggs.
Add the clarified butter, sugar, currants, lemon peel, nutmeg and rose water (or brandy) with a pinch of salt if liked.
Mix all of the ingredients together thoroughly.
Bake them in small petty pans
To make common Curd Cheese Cakes
Take a pennyworth of curds, mix them with a little cream, beat four eggs, put to them six ounces of clarified butter, a quarter of a pound of sugar, half a pound of currans well wash'd, and a little lemon-peel shred, a little nutmeg, a spoonful of rose-water or brandy, whether you please, and a little salt, mix altogether, and bake them in small petty pans.
