Strawberry Sherbet

1.1lt (2 pints) Milk
450g (1lb) Strawberries, crushed
450g (1lb) Sugar
2 Egg Whites
1 Lemon, juice only

Crush the strawberries, add them with the juice of the lemon and sugar to the milk.
Stir until the sugar is dissolved.
Freeze to a mush, add the beaten egg whites and continue to freeze until the sherbet is solid.

Serves: 6

Strawberry Sherbet

2.25lt (4 pints) Strawberries
600ml (1 pint) Caster Sugar
900ml (1½ pints) Water
1 tbsp Gelatine

Mash the strawberries and sugar together and allow to stand for two hours.
Soak the gelatine in cold water to cover.
Place one pint of water to the strawberries and strain.
Dissolve the gelatine in half a pint of boiling water, add this to the strained mixture and freeze.
