Marinade for Fish

1.1lt (2 pints) Cider
2 Carrots. sliced
1 Large Onion
2 tbsp Butter
2 tbsp Salt
4 Cloves
1 Bouquet Sweet Herbs
½ tsp Pepper
½ tsp Mustard

Cook the onion and carrot in the butter for ten minutes and add the remaining ingredients.
Cover the saucepan and simmer one hour and a half.
This is for stewing fish.
It should be strained on the fish and then should simmer forty minutes.
