Gode Broth
From: Noble Boke off Cookry.
900ml (1½ pints) Chicken Stock
300ml (½ pint) Pork Stock
125-225g (4-8oz) Breadcrumbs (Optional)
½ tsp Pepper
½ tsp Cumin
Pinch Saffron (for color)
Salt (to taste)
Combine the stock and simmer, add the breadcrumbs (if used) and spices.
Return to the boil, then reduce heat and allow to cook for a few minutes.
Remove from heat and use or refrigerate for later.
Makes 1.2lt (2 pints).
This is a basic stock used in many Medieval recipes, often prepared unthickened (without breadcrumbs).
If used, the amount of breadcrumbs used depends on the required thickness of the sauce.
Adjust The amount of spices and salt to your taste.
