Minced Cabbage
Cabbage
Butter
Hard-Boiled Eggs
Vinegar (Optional)
Salt and Pepper, to taste
Boil the cabbage until tender.
Drain in a colander.
Mince or chop finely.
For each 1.1lt (2 pints) of chopped cabbage, add two tablespoons of butter and one of flour in a frying pan.
As soon as smooth and hot, add the cabbage, season well with salt, pepper and, if used like, two tablespoons of vinegar.
Stir constantly for five or eight minutes.
When done, heap on a dish.
Make smooth with a knife and garnish with hard-boiled eggs.
Note: Many older recipes use measurement by volume.
