Drovers Roast

300g (10½oz) Lamb or Mutton
300g (10½oz) Chuck Steak
300g (10½oz) Pork of Shoulder
2-3 Onions
1 Small Turnip [Optional]
Stock or Water
Allspice
Salt

Pre-heat the oven to 170°C: 325°F: Gas 3.
Trim any excess fat from the meat and cut into 4cm (1½ inch) cubes.
Peel and coarsely chop the onions.
Peel and dice the turnip.
Place layers of meat in a casserole, followed by layers of onions and turnip (if used), seasoning each with salt and allspice.
Add enough stock (or water) to just cover the meat.
Bake covered for 2½-3 hours.
Remove the lid of the casserole towards the end of the cooking time.
Serve with potatoes, swedes or carrots and lingonberry purée or redcurrant jelly.
