Portuguese Beef and Onions

Bifes De Cebolada

450g (1lb) Sirloin Steak
450g (1lb) Tomatoes
3 Onions
2 Garlic Cloves
2 tsp Olive Oil
1 tsp Chopped Parsley
1 Bay Leaf
Salt and Black Pepper
Parsley or Corriander

Cut the steak into thin strips.
Peel, de-seed and chop the tomatoes.
Peel and thinly slice the onions and crush or chop the garlic.
Heat the oil in a frying pan and saute the steak for 2 minutes.
Add the onions, tomatoes, garlic, chopped parsley and bay leaf, seasoning to taste.
Cover and simmer for 25-30 minutes.
If there is too much liquid, remove the cover for the last few minutes, to allow evaporation.
Garnish with parsley or corriander.

Serves: 4-6
