Portuguese Green Soup
Caldo Verde
1.1lt (2 pints) Stock or Water
400g (14oz) Kale or Other Green Leaves
150g (5½oz) Chouriço Sausage
3 Large Potatoes
2 Garlic Cloves
1 Large Onion
2 tbsp Olive Oil
Salt and Pepper
Peel and dice the potatoes, peel and finely chop the onion and garlic.
Dice the sausage.
Trim and cut the kale or other green leaves into a julienne (very fine strips).
Heat the olive oil in a large saucepan, add the onions and saute gently until soft and transparent
Add the garlic and half of the sausage and cook, for 2-3 minutes stirring well.
Add the potatoes and stock (or water), bring to the boil.
Reduce the heat and simmer for 15-20 minutes or until the potatoes are tender.
Remove from the heat and allow to cool slightly.
Pour into a food processor or liquidiser and blend until smooth.
Return to the saucepan add the kale or other green leaves, season to taste and return to the boil.
Reduce the heat and simmer for 5-6 minutes.
Ladle into serving bowls and garnish with the remaining cubes of sausage.
