Portuguese Seafood Cataplana

225g (8oz) Small Clams
225g (8oz) Mussels
225g (8oz) Raw Prawns
225g (8oz) Small Squid Tubes
115ml (4floz) White Wine
60ml (2floz) Extra Virgin Olive Oil
4 Garlic Cloves
Sprigs Fresh Thyme
Bay Leaf
Use only the freshest seafood for this dish.
Scrub the clams and mussels, discard any which are open (and will not close when tapped).
Clean the squid and cut into rings, clean the prawns (but do not peel).
Finely chop the garlic.
Heat the oil in a saucepan, add the garlic and gently saute for a minute or so, ensuring it does not burn.
Add all of the other ingredients.
Cover tightly and cook over a low to medium heat, shaking the saucepan occasionally, for 6-8 minutes, or until the shells of the mussels and clams have opened in the steam.
Transfer to a serving bowl, discarding any of the shellfish which have not opened.
Serve immediately.
