Fish Soup
Kainuulainen Kalakeitto
1-1.5lt (1¾-2½ pints) Fish Stock or Water
510g (1lb 2oz) Fish Fillets
4-5 Potatoes
1-2 Onions
5-6 Allspice Berries
Salt
Chives
Dill
Parsley
Peel and slice the onions, peel and dice the potatoes.
Place the onions in a large saucepan with the fish stock (or water) and allspice berries.
Bring to the boil and simmer gently for 10-15 minutes.
Remove and discard the onions and allspice berries.
Add the potatoes return to the boil and cook until tender.
Add the fish fillets for the final 6-8 minutes, cooking until tender.
Add the finely chopped herbs, adjust the seasoning.
Serve with extra finely chopped onion and melted butter (for the diner to add) with rye bread.
