Rice Milk Pudding
Arroz con Leche
1¼lt (2.2 pints) Milk
235ml (8floz) Water
200g (7oz) Arborio Rice (Short Grain Rice)
110g (4oz) Sugar
1 Lemon, zest only
Ground Cinnamon
1 Cinnamon Stick
50g (2oz) Raisins or Sultanas [Optional]
Nutmeg
Pinch Salt
Place the water, rice, cinnamon stick, zest, sugar and salt in a saucepan and bring to a boil.
Reduce the heat and simmer until most of the water has evaporated.
Add the milk, stir well and bring to the boil.
Reduce the heat and simmer until the rice is tender and swollen, adding extra milk if needed.
Add the raisins (or sultanas) if used, about 2 minutes before the end of cooking.
Remove the cinnamon stick.
Either serve warm or allow to cool, then chill slightly in the refrigerator, sprinkled lightly with freshly ground nutmeg
