Spoon Biscuits

200g (7oz) Butter
225g (8oz) Sugar
680g (1½lb) Flour
1½ tsp Baking Powder
½-1 tsp Vanilla Essence
Caster Sugar
Jam or Marmalade
Pre-heat the oven to 170°C: 325°F: Gas 3.
Place the butter into a saucepan and heat until it turns golden brown.
Remove from the heat and stir in the sugar, allow to cool.
Sift the flour and baking powder into a bowl.
Gradually mix in the butter mixture and vanilla essence to produce a firm dough.
Place tablespoons of the dough on to a baking tray covered with greaseproof paper.
Bake for 12-15 minutes or until light golden brown.
Place on to a wire rack to cool.
Spread half of the biscuits with a jam or marmalade of choice and place the other halves on top.
Dust with sugar.
