Portuguese Cold Melon Soup

Sopa Fria de Melão

1 Honeydew Melon
150ml (¼ pint) Dry White Wine
Aniseed to taste
Mint Leaves

Cut the melon into quarters and remove the seeds.
Cut into chunks and place into a food processor or blender.
Process lightly, adding the wine and aniseed to taste.
Chill in the refrigerator.
Serve in chilled bowels garnished with mint leaves and accompanied with slices toasted bread.

Alternative: Instead of using dry white wine use a well chilled sparkling white wine, but add it just before serving.
