Sesame and Honey Sweets

340g (12oz) Sesame Seeds
235ml (8floz) Thick Honey

Pre-heat the oven to 180°C: 350°F: Gas 4.
Spread the sesame seeds on a baking tray and for 5 minutes, stirring occasionally.
Place the honey in a saucepan and bring to the boil, over moderate heat until it begins to foam.
Remove from the heat and add the sesame seeds.
Cook gently for 2-3 minutes, stirring constantly.
Lightly oil a marble or similar surface.
Pour the hot mixture on the surface and shape with a dampened spatula.
Allow to cool slightly, cut the into diamonds, squares or bars, using a knife dipped in hot water.
Allow to fully cool and store in a cool, dry place.
