Galician Hake
Merluza a la Gallega
1kg (2lb 4oz) Hake Steaks
1kg (2lb 4oz) Potatoes
375ml (13floz) Stock or Water
60ml (2floz) Olive Oil
2 Onions
2-4 Garlic Cloves
2 tsp Paprika
Parsley
Bay Leaf
Thyme
Salt and Pepper
Peel and slice the onions and potatoes.
Crush the garlic.
Heat the oil in a shallow flameproof casserole.
Saute gently for a few minutes until transparent.
Add the garlic and paprika and cook for a further couple of minutes.
Stir in the potatoes and add the parsley, thyme and bay leaf with enough stock (or water) to just cover, season to taste.
Simmer for 10-12 minutes, until the potatoes are beginning to become tender and the liquid is slightly reduced.
Season both side of the hake steaks well and arrange on top of the potatoes.
Cover and simmer for 8-10 minutes, or until the hake and potatoes are cooked.
