Portuguese Sweet Fried Toast

Rabanadas

8 Slices White Bread
115ml (4floz) Warm Milk
60ml (2floz) Rum
50g (2oz) Butter
2 Eggs, beaten
1 tbsp Caster Sugar
Icing Sugar
Ground Cinnamon

Mix the warm milk, rum and caster sugar together.
Beat the eggs.
Heat the butter and a frying pan.
Dip a slice of bread into the milk and rum mixture.
Drain lightly, dip into the beaten eggs, ensuring it is fully coated.
Fry until golden on each side.
Repeat the process for each slice of bread.
Sprinkle with icing sugar and cinnamon before serving.
