Red Cabbage

510g (1lb 2oz) Red Cabbage
510g (1lb 2oz) Apples
285ml (½ pint) Water
50g (2oz) Sugar
50g (2oz) Butter
4 Cloves
1-2 tbsp Vinegar
Salt

Trim the cabbage, cut into quarters, removing the thick stalk and slice finely.
Peel, core and slice apples.
Place cabbage and apples in a saucepan with the water, sugar, salt and cloves.
Bring to the boil and simmer, covered for 45 minutes or until tender.
Remove cloves, drain and add vinegar and butter, mix well over the heat.
Adjust the seasoning and serve.

Serves: 4
