Marinated Herring

Selyodka Pod Ukropnym Sousom

1 Herring
60ml (2floz) Red Wine Vinegar
115ml (4floz) Olive Oil
2 tbsp Fresh Dill fresh
2 tsp Sugar
Salt and Pepper

Wash the herring, remove the skin and de-bone, cut into 2½ cm (1 inch) diagonal strips.
Finely chop the dill.
Lightly whisk the vinegar, oil, sugar and seasoning together.
Stir in the chopped dill,
Pour the mixture over the herring mixing well.
Place into the refrigerator for 4-6 hours or over night, turning occasionally.
