Herring in Mustard

Sinappisilakat

510g (1lb 2oz) Herring Fillets
375ml (13floz) Water
150ml (¼ pint) Oil
100ml (3½floz) Mustard
4 tbsp Spirit Vinegar
2-3 tbsp Sugar
1½ tsp Salt
1 tsp White Pepper
Dill

Mix the water, 3 tablespoons of vinegar and a teaspoon of salt together.
Add the herring fillets, ensuring they are fully covered with the liquid.
Allow to marinate for 6-8 hours turning occasionally.
Drain and discard the marinade, remove the skin from the skin (if preferred).
Mix the remaining vinegar, oil, sugar, mustard, white pepper, finely chopped dill and salt together.
Pour over the herring fillets, ensuring they are fully covered.
Allow to marinate in a cool place, for 12-24 hours turning occasionally.
