Beef and Onion Stew
Stifado
1.5kg (3lb 5oz) Beef
1kg (2lb 4oz) Baby Onions
250ml (9floz) Red Wine
175ml (6floz) Olive Oil
150ml (¼ pint) Beef Stock
4 Medium Tomatoes
2 Garlic Cloves
1 Onion
1 tbsp Tomato Paste
Rosemary
1 Bay Leaf
Salt and Pepper
Trim any excess fat from the beef and cut into cubes.
Peel and finely chop the onion, crush the garlic.
Peel the baby onions and cut a small cross into the root end of each.
Place the oil into a large saucepan and fry the beef until browned.
Add the onion and fry until lightly browned, add the garlic and cook for an additional 1-2 minutes.
Add all of the remaining ingredients.
Bring to the boil, reduce the heat to very low.
Cook, covered for 1½ - 2 hours, or until the beef and onions are very tender.
