Fish Roe Appetiser

200g (7oz) Smoked Cod Roe
200ml (7floz) Olive Oil
60ml (2floz) Warm Water
50g (2oz) White Bread Slices
1 Lemon, zest and juice
1 Garlic Clove
Black Pepper

Remove the crusts from the bread, soak in water, squeeze until almost dry.
Remove the skin from the roe and break into pieces.
Crush the Garlic clove.
Place the roe, bread, lemon juice, zest and garlic into a food processor and blend.
Slowly add the olive oil in a steady stream, whilst blending.
Add enough water to produce a smooth, creamy mixture, season to taste.
Chill for at least 1 hour.
Serve with warm pita bread, crostini, vegetable slices, etc, garnished with olives, lemon slices or fresh herbs.
