Portuguese Tomato Rice

Tomate Arroz

500ml (17˝floz) Vegetable Stock
225g (8oz) Long Grain Rice
3 Large Tomatoes
1 Onion
2 Garlic Cloves
1 tbsp Olive Oil
1 tbsp Butter
Salt and Pepper

Chop the tomatoes, peel and finely chop the onion and crush the garlic.
Heat olive oil and butter in saucepan, add the onion until it begins to soften, add the garlic and cook for a minute or two.
Add the tomatoes, mixing well, cover and simmer gently for 5-6 minutes.
Add the stock and rice, mixing well, season to taste
Bring to the boil.
Reduce to a low simmer, cover and cook for 20 minutes or until the rice is cooked.
Serve hot or cold.
