Cottage Cheese Patties

450g (1lb) Cottage Cheese
235ml (8floz) Sour Cream
2 Eggs
4 tbsp Caster Flour
1½ tbsp Sugar
1 tsp Lemon Juice
1 tsp Lemon Zest
½ tsp Cinnamon
Pinch Salt
Butter

Place the cheese into a clean cheesecloth and squeeze to remove as much liquid as possible.
Push the cheese through a fine sieve.
Mix well with the beaten eggs, sugar, cinnamon, salt, lemon juice, zest and about 3 tablespoons of sour cream.
Gradually add the sifted flour, to produce a smooth, thick paste.
Place into the refrigerator for at least an hour.
Take large spoonful of the mixture, place onto a lightly floured surface, roll into balls and flatten slightly, to produce patties around 2cm ( ¾inch) thick.
Heat some butter in a frying pan and fry, turning once until golden on both sides.
Serve immediately with a little of the sour cream, or other preferred sauce.
