Yogurt and Cucumber Appetiser

Tzatziki

500ml (17˝floz) Greek Yogurt
1 Cucumber
30ml (1floz) Olive Oil
4 Garlic Cloves
1 tsp Lemon Juice
Fresh Dill
Fresh Mint
Salt and Pepper

Peel and either grate or finely chop the cucumber.
Place in a colander and lightly sprinkle with salt.
Allow to stand for 30-45 minutes to allow the liquid to drain.
Place in a clean cloth and squeeze to dry and remove excess liquid.
Crush the garlic cloves, finely chop the herbs.
Mix all of the ingredients together and chill before serving.
