Whipped Lingonberry Pudding

1lt (1¾ pints) Water
340g (12oz) Lingonberries
170-225g (6-8oz) Semolina
110-170g (4-6oz) Sugar
¼ tsp Salt
Cream [Optional]
Place the water into a saucepan and bring to the boil.
Mash the lingonberries and add to the saucepan together with the sugar and salt.
Bring to the boil and simmer for about 10 minutes.
Remove from the heat and strain the liquid.
Return the liquid to the sauceppan and slowly add the semolina, whilst constantly stirring.
Simmer very gently for 15 minutes or until cooked.
Allow to cool fully.
Place in a bowl and whip until light and creamy, adding cream if desired.
