Winter or Rainy Weather Soup

Zuppa per Inverno o Tempo Piovosi

710ml (1¼ pints) Vegetable or Chicken Stock
285ml (½ pint) Single Cream or Milk
115ml (4floz) Marsala Wine
3-4 Onions
2-3 Potatoes
1-2 Tomatoes
Oil
Oregano
Thyme
Salt and Pepper

Peel and either parboil or parbake the potatoes.
Peel and finely slice the onions.
Heat some oil in a sauce pan and add the onions, gently saute the onions until softened and beginning to caramelise.
Add the wine and continue gently cooking until it has evaporated.
Peel and either parboil or parbake the potatoes, cut into chunks.
Peel skin and chop the tomatoes, chop the herbs and add all to the saucepan
Cook for 8-10 minutes.
Add the stock and cream (or milk), bring to the boil, reduce the heat and simmer gently for 1-2 hours or until the
soup has thickened.
Adjust the seasoning, if desired the soup can be blended into a smooth consistency in a food processor.
Serve garnished with peel, de-seed and finely chopped tomato, if desired.
