Gloucestershire Pie

450g (1lb) Lamb, cooked
450g (1lb) Cooking Apples, sliced
450g (1lb) Onions, sliced
450g (1lb) Potatoes, peeled and diced
285ml (½ pint) Lamb Stock
50g (2oz) Butter
1 Medium Swede, peeled and diced
Nutmeg
Rosemary
Salt and Pepper

Pre-heat oven to 190°C; 375°F: Gas 5.
Parboil the onions with the apples for about 4-5 minutes.
Boil the potatoes and swede until soft.
Mash the potatoes and swede together with half of the butter, season to taste.
Place a layers of sliced lamb, followed by a layer of apples and onions, seasoning and sprinkling with herbs in an ovenproof dish.
Pour over the lamb stock.
Cover with the potato and swede mixture.
Dot the top with knobs of butter.
Bake for 1 hour.
