Irish Sausage and Potato Pie

900g (2lb) Floury Potatoes
450g (1lb) Pork Sausages
300ml (½ pint) Milk, warmed
6 tbsp Butter
2 Egg Yolks, beaten
2 tbsp Chopped Parsley
2 tbsp Freshly grated Parmesan Cheese
Freshly Grated Nutmeg
Salt and Pepper

Scrub the potatoes and cook in boiling water until just tender.
Skin the sausages, break up the meat with a fork and fry until lightly browned.
Pre-heat oven to 190°C; 375°F: Gas 5
Drain the potatoes, peel, mash well and adding the butter and parsley.
Add the sausage meat, warmed milk, nutmeg and the remaining ingredients, and beat well with a wooden spoon.
Place the mixture into a buttered dish.
Bake for 30 minutes or until the top is browned.
Serves 4.
