Common Short Crust

To every pound of Flour allow:
285ml (½ pint) Boiling Milk (approx.)
85g (3oz) Butter
50g (2oz) Caster Sugar

Crumble the butter into the flour as finely as possible, until it resembles breadcrumbs.
Add the sugar and work into a smooth pastry with the boiling milk.
Roll it out thinly and bake in a moderate oven.

COMMON SHORT CRUST

1212. INGREDIENTS - To every pound of flour allow 2 oz. of sifted sugar, 3 oz. of butter, about 1/2 pint of boiling milk.

Mode - Crumble the butter into the flour as finely as possible, add the sugar, and work the whole up to a smooth paste with the boiling milk. Roll it out thin, and bake in a moderate oven.

Average cost, 6d. per lb.
