Sunderland Gingerbread Nuts
(An Excellent Recipe)
1.25kg (2¾lb) Flour
790g (1lb 12oz) Treacle
450g (1lb) Moist Sugar (Soft Brown Sugar)
450g (1lb) Butter
40g (1½oz) Ground Ginger
40g (1½oz) Ground Allspice
40g (1½oz) Ground Coriander Seeds
Put the allspice, coriander seeds and ginger into a basin, with the flour and sugar and mix together well.
Warm the treacle and butter together.
Work it with a spoon into the flour, etc., until it forms a nice smooth paste.
Drop the mixture from the spoon on to a piece of buttered paper.
Bake in rather a slow oven for 20 to 30 minutes.
A little candied lemon peel mixed in is an improvement and a great authority in culinary matters suggests the addition of a little cayenne pepper in gingerbread.
Whether it be advisable to use this latter ingredient or not, we leave our readers to decide.
